Line cook, noodle station
Cooking noodles to firmness, dressing bowls and keeping the pass moving through a 410-bowl Friday.
- Two years on a hot line
- Comfortable calling times out loud
- Able to lift a 40 lb stock pot with help
- 02Apply
Prep cook, morning broth shift
The 4:30 am start. Blanching, scrubbing, topping up, logging the pot chart and passing the broth at 10 pm handover.

- Food handler card or we will pay for it
- 03Apply
Server, late shift
Five pm to close on Friday and Saturday, including the run to 1 am. Allergen training before your first shift.

- Willing to learn the allergen matrix properly
- 21 or over to serve sake

Counter lead
Open and close a sixteen-stool shop on your own. Cut the day's noodle count, cook, serve and call the close.

What the job is really like
Before you apply
- Schedules go up ten days ahead and do not change without a conversation.
- Kitchen shares the tip pool. Front of house does not take it all.
- Staff meal on every shift, cooked properly, not scraps.
- One paid day a year to stage somewhere else and bring back an idea.
- We pay for your food handler card and your ServSafe if you want it.
- Nobody is asked to guess an allergen answer. Ever.
