Tsumami are the plates you eat standing up in an izakaya. Ours come out within four minutes because they are built to fill the gap between sitting down and the bowl arriving, not to be a starter course.

  • Pork gyoza

    $11

    Six pieces. Big Island pork shoulder, Nalo cabbage, garlic chive, folded by hand at 7 am. Pan-steamed with a lace skirt, black vinegar and chili oil.

    Rice lager. The lace crust wants carbonation, not more fat.

  • Shoyu karaage

    $13

    Thigh marinated overnight in shoyu, ginger and sake, dredged in potato starch, fried twice. Served with yuzu kosho mayonnaise and a lemon wedge.

    Junmai, chilled. Acidity rinses the double-fried crust.

  • Ajitama

    One soy-cured egg, cooked six and a half minutes, chilled hard, then marinated 12 hours in tare and mirin. Jammy centre, never chalky.

    Four slices of the belly we braise for the tonkotsu, torched, brushed with tare, finished with karashi mustard and shaved onion.

  • Cucumber sunomono

    Smashed Japanese cucumber, rice vinegar, kombu salt, toasted sesame, shiso. Dressed to order so it never weeps.

    Blistered in a dry wok, tossed with confit garlic, Kauai sea salt and a squeeze of lime.

    Three head-on prawns from a Kekaha pond, ice-cold batter, fried at 355F, served with tentsuyu and grated daikon.

    Ginjo, chilled. Floral sake keeps a delicate batter from tasting heavy.

Our kitchen handles wheat, egg, soy, sesame, shellfish, fish and pork on shared equipment, and the fryer is shared. We cannot promise any dish is free of a given allergen. Tell your server before you order, not when the bowl arrives.

Tsumami land within four minutes because they are built to fill the gap before the bowl. Ramen is under four and a half minutes from ticket to counter. Donburi take about six.

Yes. Ramen travels with broth sealed separately, noodles dry in a vented box and toppings apart, with assembly instructions. Assemble within twenty minutes.
