Ordering and allergens

Not truly. Our wheat noodles are the base of everything and shoyu contains wheat. We can swap in rice noodles cooked in a separate basket for $2 and use the salt tare, which removes most gluten sources, but the kitchen handles flour all day and we will not promise a gluten-free bowl.

The kombu shiitake ramen and the spicy sesame ramen. Both are cooked on the plant-based station with a dedicated pot, basket and boards, and neither dashi contains bonito. The shared fryer is the one crossover, so tell us if that matters.

Egg, sesame, nuts, dairy and chili are removable from most bowls, and the allergen matrix marks which. Pork, fish and soy are cooked into the broths, so those cannot be taken out of a bowl that lists them.

Level 5 is eighteen grams of chili oil plus ground sansho and fresh Hawaiian chili. It numbs as much as it burns. We will bring water, and we do not take it off the bill if you cannot finish it.

Visiting

Waits, parking, bookings and whether the room suits your group.

Kakaako takes reservations for parties of two to fourteen, up to 30 days ahead. Waikiki takes them before 9 pm only. Kaimuki is walk-in only, sixteen stools, and closes when the noodles run out.

Kakaako runs 10 to 25 minutes at 12:15 pm and 6:45 pm on a weekday. Waikiki is quickest between 3 pm and 5:30 pm. Kaimuki queues outside from about 5:15 pm and the line is usually gone by 7.

Kakaako validates two hours in the Auahi structure. Waikiki has no lot; meters stop at 9 pm. Kaimuki is street parking on Waialae and 11th.

Yes. We have high chairs at Kakaako, half noodle portions at no charge on any bowl, and we will serve broth at a lower temperature if you ask. Kaimuki is counter-only stools, so it suits older children better.

Takeout and catering

Packing, travel time, catering minimums and gift cards.

Reasonably, if it is packed properly. We send broth in a sealed 16 oz container, noodles dry in a vented box and toppings separate, with instructions. Assemble within 20 minutes or the noodles will keep cooking.

We bring a two-burner ramen bar, a cook and a server, and build bowls to order on site. Minimum 25 guests, from $34 a head, and we need 10 days notice plus a power drop within 25 feet.

No. They carry no expiry and no monthly fee, they work at all three shops and online, and the balance is checkable at the counter or by email.
