Sake, beer and tea

Sake is graded by how much of the rice grain is polished away before brewing, and by nihonshu-do, a scale running from about minus 5 (sweet) to plus 10 (dry). Both are on the list so you can choose without asking. Serving temperature matters as much as the grade, so we have written ours down.

  • Junmai, Yamada Nishiki

    $14

    Rice polished to 70 percent. Nihonshu-do +4, dry and savoury with a rice-cracker finish. Room temperature or warmed to 105F.

    Tonkotsu, chashu plate. Dry and structured enough for emulsified pork fat.

  • Ginjo, Omachi

    $17

    Polished to 55 percent. Nihonshu-do +2, melon and white pear, best at 50F. The bottle we open most often.

    Shio kaiso, ahi don, shrimp tempura. Aromatic and light enough for shellfish and raw fish.

  • Nigori, unfiltered

    $15

    Coarsely filtered, cloudy, faintly sweet at minus 8. Shake once, serve very cold.

    Tantanmen, spicy miso. Residual sweetness is the fastest way to calm chili heat.

  • Sparkling sake, 300ml

    $22

    Bottle-fermented, 7 percent, dry. Poured cold into a flute. Serves two as an aperitif.

  • Rice lager, draft

    Brewed on Oahu with 30 percent rice. Crisp, 4.6 percent, poured at 38F into a frozen glass.

    Spicy miso, gyoza. Carbonation clears chili oil and pan-fried crust.

  • Yuzu highball

    Japanese whisky, soda, fresh yuzu, one long ice spear. Built in the glass, never shaken.

    Roasted stems, brewed at 195F for 45 seconds. Free refills, hot or over ice.

Our kitchen handles wheat, egg, soy, sesame, shellfish, fish and pork on shared equipment, and the fryer is shared. We cannot promise any dish is free of a given allergen. Tell your server before you order, not when the bowl arrives.

Tsumami land within four minutes because they are built to fill the gap before the bowl. Ramen is under four and a half minutes from ticket to counter. Donburi take about six.

Yes. Ramen travels with broth sealed separately, noodles dry in a vented box and toppings apart, with assembly instructions. Assemble within twenty minutes.
